Today I’m going to share with you a staple in our household -3 ingredient banana pancakes! These pancakes are worth the labor of love. We make a huge batch on the weekends a couple of times a month and freeze leftovers for fast and easy breakfasts.

Pancakes aren’t just for breakfast around our house. We love these for snacks and even lunch. The banana sweetens these pancakes perfectly so we forego the syrup the majority of the time. A great grab and go healthy breakfast for busy mornings, you don’t even need a fork! Get your old bananas and let’s make these easy pancakes.
Pssst…. I’ll even show you how to add some spinach to these easy banana pancakes to make them extra nutrient dense. Our kids call them “Grinchy Pancakes” and gobble them up just as fast as the regular pancakes.
These recipes are for smaller batches (about 2 servings), don’t be afraid to double or triple the recipe if you’re feeding more than a couple of kiddos or wanting to freeze leftovers.
Recommended equipment

Ingredients
Bananas
Each banana pancake recipe calls for slightly overripe bananas. I like to use the ones that are just starting to get brown spots on them. They are sweet enough to make delicious pancakes.

Recipe 1 – 3 ingredient oatmeal pancakes
These banana oatmeal pancakes with 3 ingredients are the best!
Ingredients
- 1 ripe banana
- 2 eggs
- 2/3 cup rolled oats pulsed in food processor

Step 1
Mash banana and set aside.
Step 2
Pulse dry oats in a food processor until it makes a coarse oat flour. Crack eggs into a bowl and whisk with mashed banana.

Combine with oats. Mix with spoon or spatula.

Ingredients
- 1 ripe banana
- 2 eggs
- 1/2 cup whole wheat flour

Step 1

Recipe 3 – 3 ingredient protein pancakes
Ingredients
- 1 banana
- 1 egg
- 1/4 cup protein powder -This is the brand of protein power I like because it’s unflavored and unsweetened. You can find both pea protein and whey protein powders.
Step 1
Mash banana and set aside.
Step 2
Crack eggs into a bowl and whisk. Combine with protein powder and mashed banana. Mix with spoon or spatula.

Recipe 4 – 3 ingredient sourdough discard pancakes
Ingredients
- 2 medium sized bananas
- 2 eggs
- 1 cup sourdough starter
Step 1
Mash banana and set aside.
Step 2
Crack eggs into a bowl and whisk. Combine with sourdough starter and mashed banana. Mix with spoon or spatula.

Cooking directions
- Preheat a skillet on the stovetop or preheat your griddle set to medium heat. Once preheated, grease with butter or oil of choice. We usually use butter, coconut oil, or avocado oil.
- Spoon or pour pancake batter onto a preheated griddle or pan. I like to make small pancakes and use about ⅛-¼ of a cup of batter per pancake. I find this makes the perfect size pancake for my little kids.

3. Once bubbles form -flip the pancakes.
4. Cook for another 2-3 minutes until golden brown.
5. You may need to lower the heat as you make more batches to medium-low heat.
Extra mix-ins
- Spinach -Add 1/2 cup frozen or fresh spinach to eggs and blend well in a blender. Add to other ingredients and cook as outlined above.
- Blueberries -Add 1/2-1 cup frozen or fresh blueberries to batter prior to cooking
- 1 tablespoon chia seeds
- 1 tablespoon hemp seeds
- Cocoa powder -about 1 tablespoon per batch
- ¼ tsp cinnamon
- ½ teaspoon vanilla
- Pinch of salt
Toppings
- Peanut butter -Our number one topping for pancakes is peanut butter. We skip the syrup most of the time and use peanut butter instead.
- Fresh berries or other fresh fruit
- Honey
- Drizzle of maple syrup
- Chocolate chips
- Butter
- Almond butter or other nut and seed butters
- Fresh banana slices
Storage instructions
Serve hot off the griddle. Store leftovers in an airtight container for 3-4 days.

How to freeze pancakes in bulk
Lay pancakes in a single layer on a cookie sheet and freeze (this will help prevent the pancakes from sticking together). Transfer pancakes to a gallon freezer bag or I like to stack these on freezer paper and wrap them up with freezer paper and tape closed.
If you want to skip the cookie sheet step, you can layer wax paper or freezer paper between the pancake layers in the ziplock bag before freezing.
Although the process of cooking these three-ingredient banana pancakes is a bit tedious, this really is an easy recipe and quick breakfast with simple ingredients. The best part is -these freeze and store so well, that you can make a huge batch and same time later.
I usually add a little cinnamon and vanilla extract to each batch.
